What is a virgin strawberry daiquiri?
To go back a step, a daiquiri is a classic rum cocktail. It's usually made with a combination of fruit or fruit juice, rum and sweetener. With it's icy texture, it's often associated with Summer, sunshine and holidays - yes please!
The strawberry daiquiri is the most common and popular variation.
So what do you do when you want to skip the booze? Make a non alcoholic version of course!
A strawberry daiquiri mocktail omits the rum. Great replacements include some extra citrus, a non alcoholic rum or some bitters. Any of these ingredients will give the drink that bit of kick and zing that is missing from the alcohol.
Luckily the alcohol free beverage industry is coming ahead in leaps and bounds and there are some fabulous rum substitutes out there. I can vouch for Lyres White Cane Spirit and the Fluere Spiced Cane rum.
I'd love to know in the comments below if you've tried one you like.
Ingredients
Frozen strawberries: I buy pre-frozen strawberries from the supermarket because they are generally cheaper and easier than freezing my own. If you'd prefer to buy them fresh and freeze this method would work perfectly too.
Fresh strawberries: is there anything better than plump, red strawberries that are in season? I think not! If you can only get your hands on frozen strawberries, you can always thaw them before adding.
Lime juice: freshly squeezed lime juice is always best. Not only does it taste better, but it’s better for you too. Of course, if you don't have access to fresh for whatever reason, bottled is a close runner up!
Maple syrup, or your sweetener of choice: if you're not a sweet tooth and strawberries are in season (meaning they are sweeter), you may be able to leave the sweetener out of this recipe. I'd recommend blending as per instructions below without the sweetener, then adding it slowly if you want to.
If you choose a powder type sweetener instead of maple syrup (such as Stevia or monk fruit sweetener), you may need to add a little water to make up the half a cup of liquid missing from the maple syrup.
Alcohol free rum or bitters: I have made a couple of suggestions above for non alcoholic rum, but if you don't have access to this or don't want to buy a full bottle, a few drops of bitters does wonders for this recipe. This is optional though, so even if you don't have it, you can still make this.
Why should I use frozen strawberries?
Great question! My old version of this recipe had a combination of fresh strawberries and ice, and I thought that was enough to give it that icy texture. But, when I went back to test the recipe (I test each recipe every 6 months to make sure it's still as delicious as when I first made it!). I found the ice made the drink a really watery consistency.
By using frozen strawberries and only adding a little water when adjusting the consistency, it maintains a much better texture. Much closer to a proper strawberry daiquiri.
How to make a virgin strawberry daiquiri
Place frozen and fresh strawberries, lime juice, sweetener (if using) and the optional rum or bitters in a blender and blend.
Blend until smooth on high speed. Test the flavour and consistency. Add a little extra sweetener or lime to taste. If the consistency is too thick, add a little water. Blend again. Pour into a chilled glass and serve garnished with fresh strawberries and lime.

Notes
Sweetener: if you're not a sweet tooth, you might choose to leave the sweetener out of this recipe. If you're not sure, blend the remaining ingredients as per instructions, then taste and add a little sweetener if you need to. Keep in mind that without the sweetener, the recipe is missing ½ cup liquid from the maple syrup, so a bit of extra water will need to be added.
You can use your preferred type of sweetener in this recipe. The maple syrup can be placed with 2 teaspoons Stevia, or ½ cup simple syrup made with sugar or monk fruit sweetener. Again, if you use a powder type sweetener, you may need to add a little water.
Non alcoholic rum and bitters:I like the Lyres White Cane Spirit and the Fluere Spiced Cane rum. If you don't want to buy a whole bottle, replace this with a couple of drops of bitters to give it that zing that is missing from the alcohol, or you can leave it out entirely and it will still tastes great!
